Recipe: Walnut Fudge Brownies

I can't remember how long it's been since the last time I had a brownie, but this week I had a major sweet tooth so I decided to try these and boy are they AMAZING!  Soft and chewy but with a little crunch, they make a great pal for a late afternoon coffee.



Ingredients (adapted from here)

112.5 g / 0.5 cup butter plus some to grease the pan
85 g / 3 oz semisweet chocolate
2 eggs
1 tsp vanilla extract
1 cup brown sugar
1/4 cup sugar
1 cup walnuts, chopped
125 g / 1 cup flour
1/4 tsp baking powder
1/8 tsp salt


Preheat the oven to 180°C / 350°F.  Mix flour, baking powder and salt in a bowl and set aside.  Over a double boiler melt chocolate and butter.


Once the chocolate and butter is melted, remove from the heat and add the sugars, then the eggs and the vanilla.


Add flour mixture and mix well.


Stir in half of the chopped walnuts.


Spread out the batter into a buttered baking sheet or square pan then add the rest of the walnuts on top.
Bake for 15-20 mins.  Cut and let cool.
