Recipe: Snow Day Mint Snowball Cookies



Waiting for the snow here in Paris - although it seems unlikely to come - so I'm making some Mint Snowball Cookies.  Reminds me of the snowball fights we had on those precious snow days back in New York but tastes like a crispy soft brownie and goes well with a tall glass of milk, just like when we were small and snow forts were huge!.

Recipe (adapted from here): 


180 g semi-sweet chocolate, broken in pieces or 1 cup chocolate chips
3/4 cup all purpose flour
1/3 cup cocoa
1 1/2 tsp baking powder
1/4 tsp salt
1/2 cup butter, room temperature
1 cup packed brown sugar
2 eggs - large
2/3 cup confectioners' sugar
1 1/4 tsp peppermint extract

Melt chocolate in a glass bowl placed in simmering water - but NOT touching.  Put the bowl aside so it can come to room temperature.

Whisk together flour, cocoa, baking powder and salt in a medium bowl.

Cream butter and brown sugar in an electric mixer on medium-high until fluffy. Beat in eggs one at a time then the peppermint extract, then the chocolate.  Slow down the mixer and beat in flour/cocoa mix using a measuring cup, a little at a time.  Once well incorporated, put the bowl in the freezer for 30 mins or in the fridge for one hour until it is firm enough to shape the dough.

Preheat your oven to 350°F/180°C.  Place confectioners' sugar in a shallow bowl. Form inch size balls with your hands(or using a small cookie scoop) then roll the balls in the sugar and place, well spaced apart on a lined backing sheet.  Bake for about 10 mins, let cool on the baking sheet for a few minutes then transfer to a wire rack to cool completely.
